
Let me go ahead and establish something with you all: I LOVE noodles.
As a kid, my love affair started with cheap packets of instant ramen full of MSG. Then my mom introduced me to thick, chewy strands of udon sitting in scalding dashi broth topped withgochugaru (Korean red pepper powder) and diced scallions.

You had me at "fatty pig trotter chunks" Made me think of my mom's soy sauce stewed pig's feet (actually the hocks, no hooves). Stewed so long the meat and fat fell right off the bone. and the tender marrow...
any place in Atlanta serve this kind of pig's feet?
Red - Well let's see - Any place they have Bun Bo Hue, a Vietnamese spicy soup will usually contain the trotter. Quan Ba 9 off Buf Hwy has BBH.
Iron Age, Jang Su Jang in Duluth have a jokbal appetizer dish that is cold slices of trotter served with a dipping sauce. Iron Age also has a stewy spicy version of it.
